Roasted Carrots or Winter Squash Sweet Potatoes

Product used in this recipe: BROWN SUGAR & PECAN MUSTARD

Preheat oven to 425 degrees. Wash and peel carrots. Place in a foil lined pan. Make a mixture of equal parts Terrapin Ridge Farms Brown Sugar & Pecan Mustard, olive oil, honey and brown sugar. Season with salt and pepper. Brush mixture on raw carrots. Seal in foil. Roast at 425 degrees for 30 minutes, or until fork tender. This can also be used on winter squash and sweet potatoes.
