Product used in this recipe: Raspberry Piquillo Pepper Sauce
2 ea Fresh Tilapia (fresh frozen, thawed) fillets
˝ bottle Terrapin Ridge Farm’s
Raspberry and Piquillo Pepper Sauce
Salt and Pepper
Olive oil
In a shallow pan marinate tilapia fillets in Terrapin Ridge Farm’s Piquillo Pepper Sauce for about an hour in the refrigerator. Preheat oven to 375 °F degrees. Heat a large non-stick, oven safe, sauté pan over medium high heat. Remove tilapia fillets from marinade and sprinkle with salt and pepper. Add olive oil to the hot pan, to coat. When oil is just rippling, carefully place two tilapia fillets in the pan, top side down. Be careful, moisture will cause splattering. Sear tilapia fillets, top down, for 1-2 minutes- until caramelized-- not too dark. Turn fish fillets over and place pan in oven and cook for 5 minutes, or until tilapia is cooked and flakey. Serve with additional sauce, with rice or couscous, your favorite vegetable, or with a simple salad.
