Creamy Chipotle Smashed Potatoes

Product used in this recipe:  Creamy Chipotle Pepper Dip

2 lbs.       Potatoes, peeled and cubed
1 tsp.       Ground black pepper
1 Tbsp.    Salt
2 Tbsp.    Softened butter
˝ C         Shredded Cheddar Cheese
˝ C         Creamy Chipotle Pepper Dip
1/4 cup    chopped fresh cilantro

Place the potatoes into a large pot and cover with salted water.  Bring to a boil over high heat, then reduce to medium-low, cover, and simmer until tender, about 20 minutes.  Drain and allow to dry for a minute or two.  Return the potatoes to the pot, and mash with the black pepper, salt, and butter until smooth.  Fold in the cheddar cheese and Creamy Chipotle Pepper Dip until the cheese has melted.  Stir in the cilantro.
